oh la la, a contest

ETA: I guess the main purpose for this is because I'm lazy and wanted help coming up with some new and exciting meal plans for next month. I don't really know what will be the prize... just something, that's sure to have my "stamp" on it :) whether or not it's really worth anything is up for debate!

Check it out, I'm running a contest ! I thought it might be fun to have everyone, who is interested, submit meal plans for next month. So here's how it works: an entry counts as one planned week and you can enter up to 4.5 weeks (a month's worth) of meal plans. You can submit your plans here or there, either as a comment or an email (found in my profile). At the beginning of March I will have a drawing and the winner will receive a little prize or a gift of sorts, Beth style.

Now don't fret my dears, this isn't supposed to be stressful to anyone. So if your week's meal plan happens to contain three off days (whether it's take out, restaurant, frozen dinner, etc.), that's ok because it's your plan! And you don't have to use any of my recipes or any of my tastes (aka. healthy meals :) This is just for your family, however and whatever you want to cook. Savvy?

I'm also thinking of expanding my Mess to include more meals outside of my style of cooking. So you are more than welcome to email me one of your favorite recipes (even if it calls for a cup of mayonnaise) if you'd like it to be added to the site, just for fun. I'll also be adding another label to the site named "just plain tasty" for recipes that aren't necessarily concerned with calories and taste dang good! Basically, I want people out there to feel like they have a variety of recipes and meal plans (not just mine) to choose from and to have the courage (because it does take time, initially) to plan their meals. I guess I decided this because there are so many cute girls out there posting their digi-recipes for truly tasty, albeit sinful, dishes and treats... and what do I post? Protein Bars! Hahaha! I've accepted the fact that I'm a food nerd, particularly a health nut nerd. But not everyone is and that is just fine with me :)

So happy planning! You have the next few days to plan away, so get busy! And have fun, I don't want this to be a chore or a bore!

Beth--I have a meal plan set up...do you want recipes? Here's our meal plan:

    Monday--
Salmon cooked in foil served w/ Balsamic greenbeans and mushrooms.

    Tuesday--
    Lime chicken Tex-Mex salad bowl

    Wednesday--
Lettuce wrapped turkey burgers with avocado

    Thursday--
    Steak with sauteed veggies

    Friday--
    Italian grilled chicken with broccoli

So, none of these have any carbohydrates! Since I have to be following a strict diet right now. We also have a meal plan for breakfasts if you want to see that to! Love ya... J

  3. Beth--

I am new to your blog, and I haven't entered the blog world myself...but I saw your blog linked on one of my daily reads, and decided to enter your contest!

I plan my meals and grocery trips two weeks in advance. I teach junior high and I seem to always be running behind, both in life and in school work! So not having to think "What's for dinner?" at 5:00 each day is a blessing! I am also a newlywed and after 26 years of being single, needed to be organized in order to feed my new husband dinner each night!

Sorry this message is going to be so long...but here is my meal plan for two weeks, starting tomorrow:

    Wednesday:
    Late-Night Pasta (foodnetwork.com)
    Veggie: zucchini mix
    (pick-up low-fat Swiss cheese at Cost-Co)

    Thursday:
Easy Chicken Cordon Bleu & Spinach Salad

    Friday:
    Out to Eat

    Saturday Breakfast:
    Homemade Egg McMuffins
(I use whole grain English muffins when I can find them, low-fat cheese & Eggland’s Best Eggs)

    Saturday Lunch:
    Homemade Veggie Pizzas/Salad
(Whole-wheat crust and low-fat cheese, for a treat, we sometimes add a little chopped pepperoni)

    Saturday Dinner:
    Dinner with the…McCalebs
    Late Night Pasta
    Bread/Salad/Steamed Veggies
    Brownie Dessert/Ice Cream

    Sunday:
    Hawaiian Haystacks & Rice

    Monday:
    Homemade Mac & Cheese
    Veggie: Baby Carrots

    Tuesday:
    Campbell’s Tomato Bake
    (campbellssoup.com)
I use shredded chicken, low-fat cheese, sour cream, and Healthy Request Soup

    Wednesday:
    Stir Fry Veggies and Rice

    Thursday:
    Bagel Sandwiches & Sun Chips

    Friday:
    Super Nachos/Low-Fat Sour Cream/Homemade Guacamole/Olives/Onions/Tomatoes/Jalepenos
(Make a new batch of Salsa for the week)

    Saturday Breakfast:
    Waffles OR Pancakes/O.J.
    Scrambled Eggs OR hashbrowns

    Saturday Lunch:
    Nacho Leftovers

    Saturday Dinner:
    Out to eat

    Sunday Lunch:
    Turkey Sandwiches & Veggie Chips

    Sunday Dinner:
Chicken Crock-Pot Meal & Steamed Veggies

    Monday:
    Chicken Enchiladas & Tossed Salad
(I use whole grain quesadillas and low-fat cheese)
    (Cook extra chicken for Wed.)

    Tuesday:
    Stove Top Chicken Bake

    Wednesday:
    Homemade Taco Soup

So then, two weeks from today, I make a new meal plan (I keep a list of meals that we LOVE and choose new meals from that), and a grocery list, hit the store on my way home, and dinner is served!

    Thanks! Lindsey Z.
